Apple & Plum Crumble
Using oats and nuts in this crumble topping increases the fibre content and adds a crunchier texture than a regular crumble topping but the addition of nuts in the crumble topping are optional. Likewise, if you do not have golden caster, white caster sugar is grand to use.
Serves 6
Ingredients:
400g cooking apples, peeled and cored
4 plums
1dsp. golden caster sugar
Crumble topping:
100g oats
10g plain flour
80g butter
20g flaxseed
35g pecans, crushed
35g almonds, chopped
45g golden caster sugar
Method:
1). Pre-heat the oven to 180/Gas Mark 4.
2). Cut the apple into ~1inch dice and quarter the plums - removing the stones. Place into an oven proof dish (~20*25cm) and sprinkle with 1dsp. golden caster sugar.
3). Place into the oven and in the meantime get on with making the crumble topping.
4). Place the flour and butter into a bowl and rub together. The add the remaining crumble toppings and mix.
5). Remove the dish with the apples and plums from the oven and top with the crumble topping.
6). Place back into the oven and back for 25 minutes or until the top is golden.
7). Enjoy and serve with some natural yogurt!
