Banana Pancakes

This recipe is the epitome of what The Sports Chefs is trying to achieve; nutritious, quick & delicious recipes for athletes without compromising on flavour, taste and that feeling of indulgence.

These banana pancakes are incredibly quick to whip up and are great if you have any bananas that are getting ready to walk out of the fruit bowl. They are naturally lactose-free unless cow’s milk is used.


Serves 2 (4 pancakes)

Ingredients:

100g oat flour (simply blend to a powder)

180ml oat milk (any milk can be used)

1 ripe banana, mashed

10g milled flaxseed

1tsp. vanilla extract

1 tsp. baking powder

Frylight


To serve:

Banana

Honey

Method:

1). Mix all the ingredients together in a bowl.

2). Heat a frying pan and spray with Frylight.

3). Spoon the mixture onto the pan, use approximately 2tbsp. per pancake. This should make 4 pancakes.

4). Cook until the bottom is golden brown – approximately 4-5 minutes. Then flip over and cook for another couple of minutes.

5). Top with banana and honey.

6). Enjoy!
