Pumpkin 'Mousse'

I call this a 'mousse' even though it doesn't actually contain any eggs and is more dense than a mousse.... You can use either squash or pumpkin and in the ingredients list I have said optional because there are so many flavour combinations you guys can try in here: orange, chai, apple, hazelnut... the list is never ending! Here I added cinnamon(1/2tsp), cacao (2tbsp) and topped with toasted pine nuts to add a wonderful crunchy texture. Add to taste i.e. add quantities slowly until the taste is to your liking! These are perfect for a quick dessert or snack and count towards your 5-a-day!


Serves 2


Ingredients:

200g roasted squash/pumpkin

150g plain Skyr

15g honey*

optional (get creative)


*you can add more honey if you prefer it to be sweeter but do note this will alter the carbohydrate content.










Method:

1). Blitz the squash into a puree using a food processor, hand-held blender or Nutribullet (if you don't have any of these simply mash into as fine a puree as possible).

2). Mix everything together and don't forget to add your optional ingredients.

3). Pop into the fridge for at least an hour or until ready to demolish.

4). Enjoy!
