Apricot, Cashew & Coconut Energy Balls
Quick delicious snack to have on-the-go. Note you can substitute the milk powder for protein powder if you would prefer. Also to make these lactose free and vegan substitute the milk for water.
Makes 20 balls = Serves 10
Ingredients:
100g oats
100g cashews
1tbsp. milk powder
1tbsp. milled flaxseed
200g dried apricots
40g desiccated coconut
3tbsp. milk (or water)
Method:
1). In a food processor blitz the oats and cashews until a coarse powder is formed.
2). Add the remaining ingredients and blitz until combined.
3). Shape the mixture into approx. 20 balls.
4). Place in the fridge until ready to eat and enjoy!
