Wheaten Bread

Wheaten bread is a traditional Northern Irish loaf and this recipe is from Mrs Well's, a family friend and its epic. It requires no yeast and can be put in the oven in less than 5 minutes. It is delicious served with soup, cold meats, smoked salmon or fish pates, but I like it best smeared with butter, fresh from the oven. There is something so comforting about fresh, home baked bread and the smell when its baking is sensational. Filled with carbohydrate this is great as a post workout snack...lathered in jam!



Makes a 2lb Loaf

Approximately 15 slices


Ingredients:

550g course wholemeal flour

2tsp. bicarbonate of soda

1/2tsp. salt

40g oats

40g pumpkin/sunflower seeds

2tbsp. olive oil

500-600ml buttermilk*








Method:

1). Preheat the oven to 190/Gas Mark 5.

2). Grease a 2lb loaf tin

3). Mix everything together in a large mixing bowl. *Note: use as much buttermilk to obtain the consistency of sloppy porridge. Pretty cool because this might change dependent on the weather!

4). Add to the greased loaf tin.

5). Bake in the preheated oven for approx. 40-50 minutes. To test, insert a skewer or knife and it should come out clean, with no dough stuck to it.

6). Later in butter... this is optional and enjoy!
