Breakfast: On The Go

Are you someone who loves breakfast but sometimes life gets in the way?

Why not try these brekkie bars. They are quick to make and basically like a bowl of porridge but in a bar! They are a perfect option when you have a busy morning. Being busy doesn't mean skipping meals, it just means being savvy with the time you have to plan and prep ahead.

Now you can enjoy breakfast whilst on the move.


Note that dried cranberries were used in this recipe as they provide sweetness, however, they are more calorie dense than fresh cranberries. If you are wanting to reduce your calorie intake you could leave them out or try using fresh cranberries but be aware fresh cranberries are much more tart than dried cranberries. Furthermore, chuck in whatever nuts, seeds or fruit you have handy - blueberries and raspberries work well in the summer.



Serves 6


Ingredients:

230g oats

1tsp. baking powder

1tsp cinnamon

70g honey

1tsp. vanilla essence

2 bananas, mashed (~180g)

45g dried cranberries

40g walnuts, crushed

1 large egg





Method:

1). Preheat the oven to 180C/Gas Mark 4. Grease an 8inch square baking tin with vegetable oil.

2). Mix all the ingredients together in a large mixing bowl.

3). Pour the mixed ingredients into the prepared baking tin and smooth it out.

4). Bake for approx. 25 minutes or until golden brown.

5). Cool and then slice into 6 bars.

6). Enjoy! Once completely cooled store in an airtight container in the fridge. Don't forget to grab before you leave the house!
