Christmas Energy Balls

These energy balls were inspired by Christmas pudding. They are packed with trace elements and minerals which are important for optimum physiological functioning. Many are also involved with immune function and at this time of year when perhaps we are all more prone to being run down, these snacks will help provide a little boost.


They are an excellent source of trace elements: manganese, copper, phosphorus, magnesium and selenium, a wicked source of vitamin B7 and a relatively good source of omega 3 & 6.


Makes 20-22 balls = serves 10-11


Ingredients:

40g Brazil nuts

40g pine nuts

120g ground almonds

30g milled flaxseed

50g dried dates

55g dried cranberries

1tsp. cinnamon

1/2tsp. ground ginger

1/2 orange, zest

2tsp. raw cacao

180g low-fat cream cheese

15g SIS chocolate whey protein powder


Method:

1). Firstly, add the Brazil and pine nuts to a food processor and blitz until broken down.

2). Add the remaining ingredients and blitz until combined.

3). Roll into balls using your hands. You should get between 20 and 22 balls.

4). Decorate with the vanilla quark, a pomegranate seed and a pumpkin seeds (NB: this is optional, it is faffy & gimmicky. They taste just as delicious without the topping if you are pushed for time, could not be bothered or want to wrap them up for a snack on-the-go).

5). Leave to harden in the fridge for a couple of hours.

6). Enjoy!
