Frozen Veg Frittata (5-Ingredients)

Frittata is the perfect 5-ingredient dish for breakfast, lunch, dinner or as a snack. Frozen veg is a great way to maximise the micronutrient content of vegetables and it also keeps flavours of the summer in the winter months. Frittata can be transported in Tupperware easily and will keep for a few days...if it will last!


Serves 6


Ingredients:

10 eggs

300g frozen broccoli florets

110g frozen peas

70g cheddar

230g potatoes












Method:

1). Cut the potatoes into the thickness of £1 coin with the skin on. Place into a saucepan of water and boil until almost cooked.

2). Meanwhile, defrost the broccoli and peas in the microwave. Drain any excess water and leave aside.

3). Preheat the oven to 170C/Gas 3.

4). Once the potatoes are cooked, drain and transfer to a 10-inch frying pan with a little olive oil/Frylight. Fry until the potatoes are turning slightly golden and then add the broccoli and peas.

5). Next, crack the eggs into a large mixing bowl, season with salt and pepper and whisk thoroughly to combine. Add the grated cheese.

6). Pour the eggs over the potatoes, broccoli and peas and cook on a low heat on the hob for 4 minutes.

7). Then transfer to the preheated oven and cook for 20 minutes, or until set.

8). Cut into 6 and enjoy!
