Harissa Chicken (5-Ingredients)
Harissa is a hot, aromatic spice mix, wisely used in Middle Eastern and North African cuisines. It is an excellent way to add flavour to dishes. This is an ideal evening meal with 5-ingredients that can be chucked in the oven in a matter of seconds and then left to do its thing, while you go do your thing.
Serves 2
Ingredients:
2 chicken breasts
4tsp. harissa paste
1/2 bunch parsley
1 packet of lemon couscous
220g frozen chargrilled mediterrane vegetables
Method:
1). Pre-heat the oven to 180C/Gas Mark 5.
2). Place the two chicken breasts onto an ovenproof tray and coat each with 2tsp. of harissa paste. Place into the oven for 10 minutes.
3). Then remove the chicken from the oven (keep the oven on) and add the frozen vegetables to the tray. Season with salt and pepper and coat with a little olive oil or Frylight. Pop back into the oven for 25 minutes.
4). 5 minutes before the chicken and vegetables are done put the couscous into a bowl with 170ml boiling water and cover.
5). Once cooked add the vegetables and roughly chopped parsley to the couscous. Top with the chicken and enjoy!
