Veggie Sausages (5-Ingredients)
Want a dinner that is as simple as opening a tin, chopping one veg and bunging something in the oven? Then this 5-ingredient dish is for you. Great for vegetarians or those wanting to reduce their meat consumption. The 'sausages' and the chickpeas both provide protein.

Ingredients:
4 Linda McCartney rosemary and red onion sausages
2 peppers
1 tin chickpeas
1 tin chopped tomatoes
1tsp. balsamic vinegar
Method:
1). Preheat oven to 190C/Gas Mark 6.
2). Deseed ad chop the peppers into chunks. Heat some oil in a frying pan on a medium heat and add the peppers. Cook for 5 minutes.
3). Meanwhile, place the vegetarian sausages on an ovenproof tray and cook for 16 minutes (follow packet instructions).
4). Next, after 5 minutes of cooking the peppers add the tinned tomatoes and 1/2 of the empty tin filled with water, drained chickpeas and balsamic vinegar. Season with salt and pepper. Reduce over a medium-high heat until the vegetarian sausages have finished cooking.
5). Divide between two plates and enjoy!
