Porridge: Baked Oatmeal

This can be made in one large dish or served in individual ramekins.

Note any mixture of nuts and/or seeds can be used. Similarly, this can be made vegan by using plant milk and substituting the honey for maple syrup.

This is great when you want porridge but don't want to forget about it on the stove. Simply pop it into the oven, time for 30 minutes and bam!

Serves 8

Ingredients:

200g oats

1tsp. baking powder

1tsp. mixed spice

100g nuts (50g walnuts & 50g pumpkin seeds)

750ml semi-skimmed milk

70g honey

2 eating apples, grated (skin left on)

Method:

1). Preheat the oven to 190C/Gas Mark 5.

2). Mix everything together in a large mixing bowl (make sure the honey is molten enough to mix).

3). Pour into either a square 20*20cm baking tin or 8 individual ovenproof ramekins.

4). Bake in the oven for 30 minutes or until golden brown, the liquid has been absorbed and the oats are cooked.

5). Enjoy!
