Homemade 'Snickers'

Note, if you would like to increase the protein you can add some protein powder to the blended oats. Also these are GREAT in the freezer and taste just like a snickers ice cream.

Serves 6

Ingredients:

175g dates, pitted

100g oats

1tsp. vanilla essence

75g Taste Joy Double Roasted Smooth peanut butter

30g unsalted peanuts

350g dark chocolate

Method:

1). Firstly, soak the dates in boiling water for approx. 10 mins.

2). Next, put the oats in a food processor or high-speed blender and grind to a powder. Remove and place in a bowl for the meantime. 3). Once the dates have soaked, drain them and then add to the food processor/blender along with, vanilla extract, peanut butter and 4tbsp water. Blitz into a paste.

4). Then remove 3/4 of the paste and put into a bowl, leaving 1/4 in the food processor. Then add the ground oats and 2tbsp water. Blitz.

5). Pack this mixture into individual silicone moulds ( * ) 1/2 way up each mould and press to compress.

6). Next spread the date paste over the oat base to fill the mould to the top. Press the peanuts into this pastes layer and then freeze - note, I leave these to freeze over night as they are easier to work with, however, 2 hours would be sufficient.

7). When set, melt the chocolate in a Bain Marie (chocolate in a bowl over a pan of water). 8). Then dip the bars into the chocolate to coat and leave to set.

9). Enjoy!
