Plum 'Compote' & Cardamon Bircher

This is perfect for the transition between summer-autumn morning, bircher being are summer alternative for the much loved warm porridge but the plums and spices providing the hint of the cold that is to come. Jazz up the spices with your favourite combo. This is a great breakfast before a tough training day.


Serves 2

Ingredients:

4 plums, stoned and quartered

orange

1tbsp. honey

1tsp. vanilla extract

1/2tsp. ground cinnamon

400ml milk if choice

1 cinnamon stick

1 star anise (optional)

5-8 cardamon pods

120g oats






Method:

1). Roughly chop 4 plums (remove stone). Add to a saucepan with juice and zest from orange, honey, vanilla extract and ground cinnamon.

2). Place over the heat and mash with a fork to break up the plums. Add 100ml boiling water and simmer for 10 minutes.

3). Into another saucepan place the milk, cinnamon stick, star anise and a few pods of cardamon crushed.

4). Bring to the boil and simmer for a couple of minutes. Then take off the heat and leave the spices in the milk to infuse for 5-10 minutes. Then strain the spices and discard, pour the milk into the oats.

5). Leave over night and then serve with the plum compote and your favourite nuts.

6). Enjoy!
