Chocolate & Coconut Granola Bars

These are a great energy dense snack containing a relatively high amount of fat too which would be ideal for ultra endurance events when energy will have to come from fat.

They can be kept in an airtight container for about 2 weeks.

Serves 8

Ingredients:

100g coconut oil

170g chocolate chips

30g dark brown sugar

250g oats

40g plain flour

30g desiccated coconut

Method:

1). Preheat the oven to 180C. Next, melt the coconut oil with the sugar and chocolate in a saucepan over a gentle heat.

2). Then mix in the oats, flour and coconut.

3). Evenly separate the mixture into a silicone mould and press down to compact together.

4). Pop into the oven and bake for 15-20 minutes.

5). Leave to cool in the mould and then remove, storing in an airtight container.

6). Enjoy!
