Mackerel Pate
This is delicious as a snack or even as breakfast on toast!
Serves 4
Ingredients:
8 slices bread
4 smoked mackerel fillets
100g low-fat natural yogurt
1 lemon
1tbsp. capers
Method:
1). Remove the skins from the mackerel. Then, in a food processor, add the mackerel fillets, low fat natural yogurt, capers as well as the zest and juice of lemon. Blend everything together.
2). Pop the bread in the toaster. Lather the pate onto toast and enjoy!
P.S. some chopped up dill and/or ground juniper work tremendously well in this.
