Smoked Haddock & Wild Rice
This is such a fab dinner to double up as a lunch box filler.
So quick, so simple, so delicious.
Serves 2
Ingredients:
2 smoked haddock fillets, cooked
300g cooked wild rice
zest from one lemon & juice from half
small bunch parsley
1tbsp. capers
100g sun drenched tomatoes
rocket
150g peas
Method:
1). Mix everything together and enjoy.
2). Yeah that easy.
