Oat & Coconut Cookies

These are great because they are made in less than 5 minutes, baked in 10 and you probably have most of these ingredients in your cupboard. They make 9 - the perfect quantity for one baking sheet. An amazing post workout snack with a glass of milk...or afternoon snack with a cup of black stuff.


I tried these out with coconut oil instead of butter for those of you who may be vegan or lactose intolerant. Whilst is did work the cookies will have a much more crumbly texture and held together more loosely. Personally, I would recommend the butter otherwise.


Makes 9

Ingredients:

40g oats

40g desiccated coconut

40g caster sugar

50g plain flour

50g butter*, melted

1/2tsp. Bicarb

10g honey


*try with coconut for dairy free and if vegan swap honey.





Method:

1). Preheat oven to 160C/Gas 4.

2). Put all the dry ingredients into a mixing bowl. Melt the butter and honey and add to the dry

ingredients. Mix together then form into 9 balls.

3). Place on some baking parchment on a baking sheet spaced out. Press the top down slightly with a fork.

4). Bake for 10mins. Leave to cool completely.

5). Enjoy!
