Apple & Biscuit Spread Streusel Cake
Streusel is basically just as crumbly topping consisting of flour, butter and sugar - sort of like a crumble, not to be confused with streusel - the dessert with thin layer of pastry wrapped around a fruit filling.
Serves 9
Ingredients:
3 green eating apples
200g light brown sugar
100g ground almonds
270g plain flour
250g butter
150g biscuit spread, melted
Method:
1). Freeze butter for 30 minutes.
2). Preheat oven to 190C/Gas5 and grease a 20cm (7cm deep) springform (loose bottomed) tin.
3). Peel, core and dice the apples then toss in 50g of the sugar - leave aside.
4). Put the remaining sugar, almonds and flour into a food processor and pulse until combined
5). Next cut the chilled butter into cubes and add to the food processor and pulse until the mixture comes together and crumbs form (could use hands but need to work quickly - it is important that the butter is kept cold so it doesn’t form into a dough).
6). Put half the mixture into the bottom of the greased tin and press down firmly to compact the mixture.
7). Spread the diced apple over the top, along with the melted biscuit spread.
8). Add the remaining mixture over the top (don't press this down, it should be loosely spread over the top).
9). Pop into the oven and bake for 1hr or until the top is golden.
10). Remove from the oven, run a knife around the tin to loosen and allow to cool in the tin.
11). Cut into nine and serve with yogurt or ice cream
