Chilli Con Carne

Wanting to make your carbon footprint a little lighter?

Quorn products are a great way to reduce this and your meat intake.

It also takes much less time to make than meat based chilli con carne and is also a wonderfully low calorie snack option on its own.

Serves 6

Ingredients:

1tbsp. olive oil

1 onion, sliced

1 pepper, sliced

2 garlic cloves, sliced

1tbsp. tomato puree

1tsp. cumin

1/2tsp. smoked paprika

1/2tsp. cayenne pepper

1 can tomatoes

500g Quorn mince

1 can cooked kidney beans

salt & pepper


To serve (optional):

sour cream

avocado

coriander

lime

rice


Method:

1). Add the oil to a large pot on a medium heat. Add the onions and peppers, season put the lid on and steam until beginning to soften - stir occasionally.

2). Next add the garlic and tomato puree. Cook for a couple of minutes. 3). Add the spices, Quorn mince, tomatoes and one - one & half of the empty tomato tin filled with water. Bring to the boil and then reduce the heat and simmer with the lid off for about 10 minutes. 4). Enjoy with your favourite toppings and perhaps some rice for a more fuelled day.
