Freekah Salad

This is great on its own as a veggie main or add some grilled chicken if that’s your jam. Freekeh (free-kuh) is a baby green wheat that is a perfect addition to salads or stir-fries. Also buying the precooked stuff from merchant means meals time are super quick.


Serves 2

Ingredients:

250g merchant gourmet freekah

1tsbp. orange juice

1tbsp. olive oil

1tsp. chilli flakes

1/2tsp. mixed spice

1/2tsp. salt

handful parsley, chopped

handful mint, chopped

1/2 cucumber, cubbed

1 carrot, sliced

handful broccoli florets

120g halloumi

10g pine nuts, toasted

1tsp. sesame seeds



Method:

1). Make the salad dressing by mixing the orange juice, oil, salt, chilli and mixed spice together. Add to a bowl along with the freekah, herbs and cucumber.

2). Steam the carrots and broccoli until just cooked and add to the bowl with the freekah etc.

3). Coat the halloumi in sesame oil and fry until golden on either side.

4). Add to the freekah along with the toasted pine nuts and sesame seeds.

5). Enjoy!
