Beef, Noodles & Mango Salsa

This is so so so so flipping delicious and all that needs to be said.

The mango salsa would also work wonderfully with fish, chicken or pork.

I simply stir-fried this beef but if you had a BBQ on the go I'd recommend barbecuing.



Serves 2

Ingredients:

500g beef sirloin, sliced into strips

3tsbp. honey

2tbsp. soy sauce

1/2tsp. Chinese 5 spice

1 ripe mango, peeled & chopped

1 red chilli, diced

1/2 red onion, diced

1/2 lime, juiced

coriander - to taste

200g green beans

110g rice noodles


Method:

1). Firstly, put the beef, honey, soy sauce and 5 spice into a bowl. Mix well and leave for 30mins. 2). Next make the mango salsa. Simply put the mango, chilli, red onion, lime and coriander into a bowl and mix well. 3). Once the beef is ready get the green beans on to steam. Make sure the frying pan is on a high heat and is hot then add the beef strips and marinade. Cook for about 3 minutes to ensure all sides have changed colour. Meanwhile cook the noodles as per packet instructions. Once the beef is done take it off the heat. 4). Drain the noodles and divide between two plates along with the green beans, beef and mango salsa.
