Ricotta Pancakes

Fed up of rubber or dry pancakes? Then this is the recipe for you... These also supply a decent amount of protein without needing to add any protein powder.



Serves 5

Ingredients:

200g ricotta

200ml semi skimmed milk

4 eggs

150g plain flour

1tsp baking powder

pinch salt






Method:

1). Separate the eggs - yolk into one bowl, whites into another. Place the ricotta and milk into the bowl with the yolks.

2). Put the flour, baking powder and salt into another bowl and mix in the yolk mixture until combined to a smooth batter.

3). Beat the egg whites until they become stiff. Gently fold into the batter.

4). Heat a little butter in a frying pan over a medium-low heat. Add ~1-2tbsp. per pancake and cook until golden underneath. The flip over and continue to cook for about another minute. Continue until all the batter has been cooked.

5). Enjoy with you favourite toppings - definitely check out the poached peaches.
