Poached Peaches
This is wonderful to add to some yogurt as a pre/post workout snack. It is also an amazing addition to the ricotta pancakes.
Serves 6
Ingredients:
200g sugar
500ml water
2 lemons, juiced
6 peaches, halved
200g blueberries
Method:
1). Put the sugar and water into a saucepan and over a gentle heat stir until the sugar has dissolved. 2). Add the lemon juice and peaches. Poach until the peaches are just cooked. This may take about 10mins depending on the ripeness but a good way to check is that a knife should go through with a slight resistance as they will continue to cook as they cool.
3). Transfer to a bowl and leave to cool. Once cooled add the blueberries.
4). Enjoy with yogurt, pancakes, porridge!
