Chocolate, PB & Orange Rice Pudding
This is a delicious way to bump up your carb intake even if I do say so.
You could use whatever nut butter you fancy or leave it out if you don't fancy it.
Serves 4
Ingredients:
120g risotto rice
1 orange, zested and juice
1l semi-skimmed milk
60g PB
80g dark chocolate
Method:
1). Preheat the oven to 180C/Gas 4. Put the milk, PB and chocolate into a saucepan and bring to the boil, stirring to ensure the chocolate has melted.
2). Put the rice and orange zest and juice into an ovenproof dish. Once the milk is warm and the chocolate has melted pour over the rice and mix everything together.
3). Pop into the oven for one hour. Cooking times will vary and so you have to keep an eye on it. You will know it is cooked once the rice is soft.
4). Enjoy!
